Preparation Steps

  1. Heat a thick-bottom pan or kadai on low-medium flame.
  2. Add ghee or oil and allow it to warm slightly.
  3. Add makhana and roast continuously for 10–15 minutes.
  4. Stir well to avoid burning and roast until makhana becomes crisp.
  5. Press one makhana with fingers; it should break easily.
  6. Add salt, pepper, turmeric and optional spices.
  7. Mix well for 1–2 minutes on low flame.
  8. Switch off flame and cool completely.
  9. Store in an airtight container to keep it crispy.
