Preparation Steps

Prepare ingredients

Beat the eggs in a small bowl with a pinch of salt and pepper.

Chop onions, garlic, carrots, and spring onions.

Keep cooked rice ready (cold rice works best for fried rice).

Cook the eggs

Heat 1 tablespoon of oil in a large pan or wok over medium-high heat.

Pour in the beaten eggs, scramble them quickly, and cook until just set.

Remove scrambled eggs from the pan and keep aside.

Cook vegetables

Add 2 tablespoons of oil to the same pan.

Add garlic and onion, stir-fry for 30 seconds until fragrant.

Add carrots (and peas if using) and stir-fry for 2–3 minutes until slightly tender.

Add rice

Push the vegetables to one side of the pan.

Add cold rice, breaking any clumps with a spatula. Stir-fry for 2–3 minutes.

Season

Pour soy sauce evenly over the rice. Mix well.

Add the scrambled eggs back into the pan.

Stir everything together and season with salt and pepper as needed.

Finish and serve

Add chopped spring onions and give a final quick stir.

Serve hot.
