Preparation Steps

Cook the rice

Use any variety of rice you prefer. Cook until soft but not mushy. Spread it on a plate to cool so the grains remain separate.

Prepare the tempering

Heat oil in a pan.

Add mustard seeds and let them splutter.

Add the dry red chili, green chilies, and curry leaves. Fry for 15–20 seconds.

Add spices

Sprinkle in turmeric powder and stir well.

Add roasted peanuts for crunch.

Mix with rice

Lower the heat. Add the cooled cooked rice to the pan.

Sprinkle salt and mix gently so the rice grains don’t break.

Add lemon juice

Switch off the heat before adding lemon juice to retain its fresh flavor.

Mix gently until evenly combined.

Garnish and serve

Top with fresh coriander leaves.

Serve warm or at room temperature with pickle or papad.
