Preparation Steps

  1. Wash, peel and cut potatoes into small cubes or thin slices.
  2. Boil potatoes for 5–6 minutes until slightly soft. Do not overcook.
  3. Drain the water completely and keep aside.
  4. Heat oil in a pan.
  5. Add mustard seeds and allow them to splutter.
  6. Add cumin seeds, curry leaves and green chillies.
  7. Add onion and fry until light golden.
  8. Add ginger garlic paste and sauté for 1 minute.
  9. Add turmeric powder, red chilli powder, coriander powder and salt.
  10. Add potatoes and mix gently until masala coats well.
  11. Fry on medium flame for 10–12 minutes until golden and crispy.
  12. Add garam masala and coriander leaves.
  13. Serve hot with rice, dal, sambar, curd rice or chapati.
